Chicken Bokchoy Oyster Sauce




This is a simple dish which is one of our favorites.  My husband and I eat a lot of bokchoy - stirfry, filipino pansit (noodles) with bokchoy, one of vegies for sinigang (tamarind soup), one of vegies for nilaga (beef soup) and tofu and bokchoy.

Ingredients:
1 chicken breast, sliced thinly
1-2 bunch of bokchoy, washed
1 tsp. minced garlic
1 tbsp corn oil
3-4 tbsp oyster sauce
2 tbsp flour
salt and pepper

Cooking Instructions:
1.  lightly salt sliced chicken breast, add pepper
2.  coat each slice of seasoned chicken breast with flour
3.  fry in medium heat in a large frying pan till light brown
4.  add and coat chicken with 2 tbsp. oyster sauce
5.  remove from pan and set aside
6.  in same frying pan, in very little oil, fry garlic till light brown
7.  add bokchoy to pan, cover till its steaming, wait 1-2 minutes
8.  uncover, stir, season lightly with salt and pepper, add 1-2 tbsp oyster sauce, stir
9.  add chicken on top or stir with the vegies
10. serve with rice
