Chicken Katsu


I have this big resealable bag of chicken strips from Costco.  I think weight is about 3 kgs.  Last week, I have cooked the first half of it or about 1.5 kgs.

Today, I cooked about 1 kg. of this chicken strips and made them chicken katsu.

Chicken Katsu Recipe
1 kg. chicken strips or chicken breast sliced about 1/2 inch. thickness
2 pcs. eggs
1 cup flour
3 cups panko (japanese bread crumbs)
salt
pepper
oil

Cooking Instructions
1.  salt and pepper the chicken
2.  in a bowl, put the flour, coat the chicken pcs. with the flour
3.  in another bowl, beat the two eggs with some salt and 2 tsp. of water
4.  in a plate pour some panko, put more panko as needed through the process
5.  have another plate ready
6.  dip into the egg one piece of chicken (floured) then transfer to the plate with panko
7.  coat with panko then transfer to the empty plate
8.  repeat this process till all chicken pieces are covered with panko
9.  in a pan, heat about a half inch of oil to medium heat, fry the panko covered chicken till golden brown on both sides.
10. have a bowl or plate ready with several layers of paper towel to receive fried chicken katsu and to have excess oil removed
11. eat katsu with steamed rice (like we Filipinos do) and your favorite sauce (catsup or sweet chili sauce or mayo) or sandwiched in a bun with mayonnaise and lettuce if you have some

Tip:  Remove burnt panko from the pan before putting more chicken to fry.  Add oil as needed
